These mile-high Cinnamon Applesauce Pancakes are a healthier variation to buttermilk pancakes. Your family is sure to fall in love with them like mine has!
I don’t know about you but I’ve never had any success making fluffy pancakes from scratch…that is until these wonderful pancakes entered my life. I adapted the original recipe a bit by adding half wheat flour (using all wheat was a flop) and more applesauce. It’s the perfect combination and these mile high pancakes are going to melt in your mouth at the very first bite!
Mile-High Cinnamon Applesauce Pancakes
1 cup All-Purpose Flour
1 cup Wheat Flour
4 teaspoons Baking Powder
1/2 teaspoon Salt
2 tablespoons Sugar
2 teaspoons Cinnamon
1/4 teaspoon Vanilla Extract
1 1/2 cups Water
1 1/2 cups Applesauce
- Mix together your dry ingredients.
- Add your wet ingredients and mix well. (I like to mix these with a whisk over a spoon because it gets the lumps out much better – and quicker!)
- Pour your batter onto a lightly oiled, preheated cast iron skillet. (I cook my pancakes on medium heat.)
- When your batter starts to bubble it’s time to flip them.
Yields: 16 medium-size pancakes
Note: When cooking pancakes you have to be patient. Keep in mind that the first batch usually takes the longest to cook. Don’t be like me and turn your heat up on your pan. Be patient and keep it on medium heat and you’ll have fabulous pancakes!

These pancakes are a yummy breakfast, or even snack, by themselves. But for an added treat, top them with maple syrup or add a dollop of natural peanut butter! Either way you enjoy them, I know you’re going to love them!
