We’ve had a wonderful bounty of zucchini from this year’s garden. Last year I whipped up some Zucchini Bread, but this year I wanted to try a new recipe to add to our favorites. So, I asked my Facebook friends what to make and one of the fabulous suggestions was Chocolate Chip Zucchini Bread! I scoured Pinterest for the perfect recipe, and this yummy creation is what I came up with!
Chocolate Chip Zucchini Bread
1 cup Oil
1 cup Sugar
1 cup Brown Sugar
4 teaspoons Vanilla
3 cups of shredded, unpeeled Zucchini
3 cups All-Purpose Flour
1 cup Cocoa
1 teaspoon Baking Soda
2 teaspoons Baking Powder
1 teaspoon Salt
1 bag of Chocolate Chips (I used minis)
- Mix together your eggs, oil, sugars and vanilla. Add in your zucchini. Slowly add your dry ingredients to your wet ingredients, then your chocolate chips.
- Spray two loaf pans with cooking spray and spoon in your mixture. Bake at 350 for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in loaf pans on wire cooling rack for 10 minutes. Take a knife and go around the edges of the pan to loosen the bread from the pan. Flip pan onto your wire rack and continue to cool.

This recipe is so yummy and I know you’re going to love it! To be perfectly honest, had I not whipped up this recipe myself, I wouldn’t have known there’s zucchini in it because of all the chocolate yumminess.
