I found some oatmeal in the cabinets and was trying to decide what to make with it when I remembered this recipe for Oatmeal Raisin Cookies. However, I was plum out of raisins so I opted for chocolate chips.
I used the mini chips and, let me say, these cookies turned out quite tasty! I doubled the recipe and even put a ziploc baggie full in the freezer for us to enjoy later!
Oatmeal Chocolate Chip Cookies
- 3/4 cup butter or margarine, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 3/4 packed brown sugar
- 1/2 cup sugar
- 2 cups quick-cooking oats
- 3/4 cup chocolate chips
In a mixing bowl, cream together the butter, egg and vanilla. Add the dry ingredients. I used a medium scoop and baked the cookies for 11-13 minutes at 350. (These cookies are tricky because they don’t look like they’re done when they really are. Let them sit on the cookie sheet for a minute or two after you take them out of the oven. This will keep them from falling apart. Cool on a wire rack.)
