This is my new favorite! I had seen this recipe (or something very similar to it) in a magazine forever ago and taken a picture with my phone. After finally getting around to making it, boy do I wish I had made it sooner. We have been missing out!
You’re going to love it because it’s so yummy and super simple to make. Oh yeah, did I mention that it’s also guilt free?
12 oz Grape Tomatoes, diced
1 can Kidney Beans, drained and rinsed
1/2 can Corn, drained and rinsed
- Mix all ingredients together.
One of the fabulous things about this dip is that you can use as little or as much of these ingredients as you like. You could also use different beans or add onions, lemon or lime juice, or anything your heart desires. The sky is definitely the limit with your options!
