Glazed Donut Muffins

But, I must admit that I was hoping for, well, a Krispy Kreme donut. So, don’t go into making this recipe with that expectation because it’s not a healthy one. This is a great variation from your normal blueberry and poppyseed muffins.
Glazed Donut Muffins
1/4 cup butter
1/4 cup vegetable oil
1/2 cup granulated sugar
1/3 cup brown sugar
2 large eggs
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoons ground nutmeg
1 teaspoon cinnamon
3/4 teaspoon salt
1 teaspoon vanilla extract
2 2/3 cups all-purpose flour
1 cup milk
Cream together the butter, vegetable oil and sugars until smooth. Add the eggs and vanilla and continue mixing. Add in the baking powder, baking soda, nutmeg, cinnamon, and salt. Alternate the flour and milk until everything is thoroughly combined. Spoon the batter into lightly greased muffin tins and bake at 425 for 15-17 minutes.
Glaze
3 tablespoons butter; melted
2-3cup confectioners’ sugar; sifted
3/4 teaspoon vanilla
2 tablespoons hot water
Mix together the melted butter, confectioners’ sugar, vanilla and water. Whisk until smooth. When muffins have cooled slightly, dip the top of the muffin into the glaze. You’ll want to make sure you place cling wrap underneath the muffins to catch any drips.
