Dressing Up Mundane Macaroni and Cheese - No more boring mac and cheese, dress up it with endless possibilities!

Although I don’t make it very often, I’m a big fan of macaroni and cheese. Not only is it a fabulous comfort food, but it’s also super easy to make!

Growing up, we loved adding tuna to our macaroni and cheese. And while I still love that variation, Trent isn’t a fan of tuna! (I can see some of you curling up your lip at the thought of tuna! You definitely either love it or hate it!)

A few nights ago I decided to have macaroni and cheese for dinner. I didn’t want to serve it alone and started drumming up ways I could dress it up. So, I drew inspiration from my childhood days. I scanned my cabinets and fridge to see what I had on had that I could add!

(And, in case you’re wondering about this brand of macaroni and cheese, I found it when I was gunking around the aisles of Aldi. At around $.40 I didn’t have to think twice about plunking it into my cart. What can I say? I’m a sucker for a fabulous deal!)


I prepared the macaroni and cheese according to the package directions, then added a few handfuls of fresh spinach to the pot. I placed it back on the hot burner, put the lid on and let it do its thing for a few minutes. Nothing was happening so I decided to stir the spinach into the mac and cheese. That did the trick!

I could have added more than a few handfuls of spinach, but since I was experimenting I didn’t want to add too much! After all, you wouldn’t want a little macaroni and cheese with your spinach, right?;o)

The sky’s the limit on what veggies you could add. Peas, mixed veggies, broccoli – as you long as you like it, that’s all that matters! (If you’re using frozen veggies, I would recommend cooking them before adding them to your macaroni and cheese. Otherwise, your noodles might become mushy.)

I added cooked, shredded chicken that was leftover from the night before, and a bit of pepper. You could easily add any other type of meat…ground turkey, canned chicken, etc.

This was a very tasty meal and I’m glad I dressed up the macaroni and cheese.
