Chicken Ranch Quesadillas
- 1/2 lb. chicken or turkey, cooked and thinly sliced
- 1/2 lb. bacon, cooked and diced
- 2 – 3 c. shredded cheese
- Ranch dressing
- 8 tortillas
- Butter or margarine, for cookin
Add crumbled bacon. (You could also add sauteed onions and peppers if you’d like.)
Ranch dressing and another tortilla. Melt a little butter or margarine in a large skillet and cook the tortilla stacks one at a time over medium heat, about 4-5 minutes per side, until golden brown and cheese is melted. Add more butter or margarine to the skillet as needed.
I cooked one in the skillet (pictured above) and cooked the rest in a 350 degree oven for 15-20 minutes (pictured below). We liked the crispiness of cooking it in the skillet, but it tasted “healthier” to bake them.
