Chicken Ranch Quesadillas

  • 1/2 lb. chicken or turkey, cooked and thinly sliced
  • 1/2 lb. bacon, cooked and diced
  • 2 – 3 c. shredded cheese
  • Ranch dressing
  • 8 tortillas
  • Butter or margarine, for cookin
Layer cheese then chicken on top of tortillas.

 Add crumbled bacon. (You could also add sauteed onions and peppers if you’d like.)

Ranch dressing and another tortilla.  Melt a little butter or margarine in a large skillet and cook the tortilla stacks one at a time over medium heat, about 4-5 minutes per side, until golden brown and cheese is melted. Add more butter or margarine to the skillet as needed.

I cooked one in the skillet (pictured above) and cooked the rest in a 350 degree oven for 15-20 minutes (pictured below).  We liked the crispiness of cooking it in the skillet, but it tasted “healthier” to bake them.
