One of my new favorite places to find recipes is on Pinterest. If you haven’t checked it out you’ll be hooked after your first visit!!! A few weeks ago I saw this idea for Bacon Pancakes. Since I was already using bacon for our Crockpot Breakfast Casserole (below) I figured I’d give it a whirl.
I used turkey bacon for our pancakes. The bacon wasn’t flat so it was a bit difficult to pour the pancake batter on top of it. (Who knows, I could have done it totally wrong. – wink)
If I made these again, I would just put the bacon bits into the batter because it was difficult to cut the pancakes. I had fun to trying this recipe.
Crockpot Breakfast Casserole
Before I share the ingredients, I have a confession to make. I saw this recipe on another site and wanted to try it. However, I didn’t want to use the same ingredients as they did. Their recipe called for bread instead of potatoes – due to this fact, the cook time was not the same. Let me just say that at the end of the cooking time I had to throw the crockpot into the oven so that we could eat dinner at a reasonable hour. That being said, I’ve adjusted the cooking time below to what I think will be correct – but don’t quote me on that.
- 3/4 bag of hashbrown potatoes, thawed
- 1/2 package of bacon, cooked and diced
- 6 eggs
- 1/2 cup milk
- Shredded cheese
- Salt, pepper and any other seasonings you’d like
You could also include fresh vegetables or different meat if you’d like.
Spray your crockpot with cooking spray. Place the hashbrowns in the bottom. Mix together the eggs, milk, and seasonings and layer that next. Add the bacon and cheese. Cook on high for 2 1/2 – 3 hours. (I cooked mine for 1 1/2 before putting it in the oven).
Other than botching up the cook time, this was a wonderful recipe. Plus, Trent liked it which is even better!
